Gluten-Free Chocolate Peanut Butter Cheesecake Brownies

I had a lot of fun making these brownies; they were also really fun to eat. The mixture of brownie and cheesecake together, if made correctly, tastes great. The directions may look long and complicated, but these brownies are completely worth it.

Ingredients:

  • 1 package of gluten free brownie mix (regular brownie mix works as well)
  • 1 container of cream cheese
  • 1 egg
  • ¼ cup Stevia (sugar is also good; I used Stevia because it has no calories)
  • 2 teaspoons of vanilla extract
  • 2 tablespoons of peanut butter

Instructions:

  1. Preheat oven to 350.
  2. Line an 8×8 baking dish with parchment paper to make it easier to take the brownies out, and set it aside.
  3. In a large mixing bowl, combine the brownie mix according to the directions on the package.
  4. Lightly spray your parchment paper with cooking spray, and spread half of the brownie mix evenly into the pan.
  5. Then, in a small mixing bowl combine the cream cheese, egg, sugar or Stevia, vanilla extract, and peanut butter and mix well. You may want to use an electric mixer to make sure it is completely smooth.
  6. Drop spoonfuls of the cheesecake mixture over the brownies, so the mixtures don’t mix together.
  7. Spoon the remaining brownie batter over the top and, if you want, use a toothpick to create little swirls in the batter.
  8. Bake for 30-35 minutes.
